Crisp and pale green, celery is a low-calorie vegetable that's chock-full of nutrients. A 1-cup serving of fresh celery juice -- produced from 4 cups of chopped raw celery -- has 65 calories, less than 0.7 grams of fat and almost 2.8 grams of protein. This makes celery juice a good choice to help you get 3.5 to 5 cups of vegetables per week, which is the amount recommended for men and women by ChooseMyPlate.gov.

Potassium

Potassium is an electrolyte and an essential mineral, assisting your body in regulating its acid-base balance and keeping your heart's electrical activity healthy. It also aids with the breakdown of carbohydrates, and it is essential for building muscle and proteins. A single serving of raw celery juice contains 1,050 grams of potassium, which is over 22 percent of the recommended dietary intake for men and women.

Calcium

An essential mineral, calcium builds and maintains strong, healthy bones and teeth, and it's vital for maintaining a strong skeletal structure. Calcium also helps transmit information through your nervous system, and it aids in the dilation and constriction of blood vessels. The recommended dietary allowance, or RDA, for adult males up to age 70 is 1,000 milligrams of calcium a day; after age 70, men should get 1,200 milligrams. The RDA for women is 1,000 milligrams daily up to age 50, and 1,200 milligrams after age 50. A single serving of celery juice contains 162 milligrams of calcium, which is a little over 16 percent of the RDA for adults and 13.5 percent of the RDA for pregnant women.

Vitamin K

Vitamin K supports blood coagulation, making it essential for the healing of wounds and bruises. Insufficient amounts of vitamin K in your body will lead to abnormal bleeding and difficulty recovering from injuries, even mild bruising. Vitamin K also helps your body use calcium, making it important for maintaining healthy bones and teeth. A single serving of raw celery juice contains a little more than 118 micrograms of vitamin K, which is more than 100 percent of the adequate intake for men and women.

Folate

Folate, one of the B vitamins, helps your body break down, produce and use proteins. A lack of folate in your system can lead to peptic and mouth ulcers, gray hair, diarrhea and possibly anemia. A single serving of raw celery juice contains 145 micrograms of folate. This is over 36 percent of the acceptable intake for men and women, and 29 percent of the acceptable intake for pregnant and breast-feeding women.
